The Veg Box Weekly Meal Planner

Seasonal vegetable box and a freshly cooked autumn vegetable dish

Seven days of good food, starting with what’s in the vegetable box and what we already have in the store cupboard. Riverford shares a preview of what will be in forthcoming veg boxes, so I can plan ahead before the delivery arrives. I’ll upload each upcoming box list here and build seven days of meals around it, using the most delicate vegetables first and making leftovers work harder. Rather than shopping for seven separate recipes, we’ll check what is already in the cupboard and buy only what’s missing.

This Week’s Meal Plan

November: Week One — seven dinners from a seasonal veg box

How It Works

  • Unpack and take stock. See what has arrived, then check the fridge, freezer, dry store and tins before writing a shopping list.
  • Cook in the right order. Use delicate leaves and peppers early, and keep sturdy squash, potatoes and onions for later.
  • Plan for leftovers. Cook extra rice, roast vegetables or soup where useful, and turn them into tomorrow’s lunch.
  • Shop only for the gaps. Every plan includes a short optional top-up list, not a trolley full of new ingredients.

A Little About Riverford

Riverford is a UK organic veg-box company delivering seasonal produce. A box is a lovely way to let the season decide what to cook, and it can encourage you to try vegetables you might otherwise pass over. I’ll be sharing how I use a week’s delivery, including the odd awkward leftover and the ingredients I already have in the cupboard. This is an independent feature, not a sponsored endorsement.

You don’t need a Riverford box to follow along. Use vegetables from another supplier, a market, your garden or the bottom of your fridge. The point is to cook with what you have.
